Rub the chicken pieces with oil, cayenne, turmeric, coriander and salt. Bake for 40 minutes - careful not to give them too much colour as they're being grilled later on!
In a large ovenproof dish make a sauce from coconut, peanut butter, sweet chilli and soy sauce. Toss the cooked chicken in this and grill the whole thing on high to crisp and blacken the chicken and cook down the sauce. Turn over halfway through and blacken other side.
Serve with as a starter with lime wedges and chopped coriander. Delicious!
