In a large bowl whisk together the plain flour, sugar, bicarb, baking powder, salt and curry powder.
In a separate bowl, whisk the eggs, butter and buttermilk together until completely combined. Combine the wet and dry ingredients until just mixed - there should be a few spots of dry batter swilling around.
Lightly grease your waffle iron and cook until golden and crispy, then set aside on a baking sheet in a warm oven until ready to use.
Meanwhile, whisk together the ingredients for your Katsu waffle syrup.
When ready to serve, pile high your Katsu nuggets and pour over the syrup, then top with toasted nori strips and white and black sesame seeds.
