Get your biggest, deepest baking dish and measure the length, depth and width. Cut two pieces of cardboard to fit in a cross shape in the middle and wrap each with foil. Cut two slots in them and fit them together before lining your baking dish and fitting the cross in place to make four quarters.
Heat the golden syrup and butter together until it simmers then remove from the heat and pour evenly over the base of the tin.
Place the pineapple slices and cherries in one corner, overlapping apple pieces in another, plum pieces in another and slices of banana in another.
Sift flour, baking powder and salt together. Add butter and mix until it resembles coarse sand. Add sugar and mix until sandy. Add eggs and blend until smooth. Pour in vanilla and milk and blend just until smooth. Do not over mix.
Split the batter in four and add the fillings - pineapple obviously goes with pineapple, cinnamon with apples, lemon zest with plums and chocolate chips with the bananas. Pour each into its respective quarter.
Bake for 35-40 minutes until a toothpick comes out clean. Let cool for 10 minutes before flipping over onto a large board. Carefully remove the cross.
