Heinz [Seriously] Good Mayonnaise Creamy Cashew Curry
In a large bowl mix together all of the marinade ingredients to form a paste. Add the chicken to coat. Marinate for 30 minutes up to 24 hours.
Preheat the oven to grill. Line a baking sheet with foil and drizzle with oil.
Arrange the chicken pieces on the baking sheet and grill turning to make sure the chicken is evenly cooked. Remove and set aside.
Meanwhile, heat oil in a pan over medium heat. At the cumin seeds and as they begin to sizzle add the onions. Cook through until softened and lightly caramelized. Add the ginger, garlic and curry paste. Cook through for another minute.
Add the cashews. Stir to coat well and cook through for a few minutes. Stir through the passata and cook until thickened. Season with salt.
Add the cooked chicken pieces and mix well. Simmer for a couple of minutes before adding the Heinz Mayonnaise and cream. Stir to mix well.
Serve with rice and garnish with chopped coriander and cashews.
