  1. In a bowl, mix flour, oil, salt and water. Let the dough come together. transfer to a lightly floured work surface and knead until smooth.

  2. Place in a greased bowl and cover with plastic. Let rest for 30 min.

  3. Meanwhile, add some oil to a saucepan. Crumble in the sausage meat and let cook on one side to brown. Break apart with a spatula or spoon into small bits. Add the garlic, chilli flakes and oregano and stir to cook through for a couple of minutes.

  4. Simmer then add the tomatoes. Stir and season with salt and pepper and then add the basil.  Let simmer until it has thickened and reduced, about 10-15 minutes.  Add the chopped spinach and cook for another 8-10 minutes. There shouldn’t be a lot of liquid when you drag your spoon through.

  5. Taste and season sauce with salt, pepper and sugar if needed. Transfer to a sheet pan and let cool completely

  6. Preheat the oven to 275ºc (450ºF). Grease and line a loaf pan with parchment paper

  7. When the dough has rested, roll it out on a floured surface very thin about 3ft by 2 ft or 1/16th of an inch. (So very thin - like pasta is)

  8. Spread the sauce over the middle of the rectangle in a thin, but not too thin, layer. Sprinkle with some cheese and some torn basil leaves.

  9. Fold the two plain sides of the dough over so their edges overlap in the middle of the rectangle by 2 inches. Spread the left two-thirds of the dough with more sauce and the remaining cheese and basil.
