Oatmeal Chocolate Chunk Cookies

  1. Preheat the oven to 160ºF.  Line cookie sheets with parchment paper
  2. Whisk together the flour, oats, cornstarch, baking powder, baking soda, salt, and cinnamon and set aside
  3. In a large bowl, beat together the butter and sugars until smooth and paler but not fluffy
  4. Beat in the egg, egg yolk, and vanilla. Add the flour and oat mixture to the butter mixture
  5. Mix until everything is thoroughly incorporated. Scrape the bottom and sides of the bowl and mix briefly
  6. Stir in the chocolate chunks
  7. Form 40-60 g balls of dough onto the prepared baking sheets, leaving about 1 1/2" to 2" between cookies. Chill for 30 minutes ideally overnight in the fridge.
  8. Bake the cookies for 12 to 17 minutes until they’re golden brown on the edges
  9. Remove from the oven, and let cool on the pan slightly. Once ready, transfer to a wire rack.
