Heat the oil in a pan and add the chicken. Fry until cooked through then roughly chop into small pieces and place in a bowl alongside the BBQ sauce, salt, pepper, parsley and bacon.
Place the rectangle of pizza dough on a baking sheet. Spread over the chicken mixture then top with onion, mozzarella and Red Leicester. Bake in the oven for 20-25 minutes until the dough is cooked through and crisp.
Slice up the pizza into lengths and serve up with the sour cream and chive dip.
