1. Add some of the slow cooked salt beef to a pan with butter and chives and cook until all the butter has melted
2. Slice and toast your bagels
3. Slice the Boursin and spread liberally over the bagel halves
4. Add the mixed greens and cooked beef to the bottom half of the bagels then close the bagel with the top half.
