Coke Can Chicken

  1. Rub the chicken all over with cayenne, black pepper and salt and set aside.
  2. Pour half one of cokes into a glass and then stick it up the chicken, open side up, so it steams the cavity. Put the chicken in the oven at 350°F/190°C.
  3. Heat a saucepan and add the remaining coke, jalapeño, garlic, lime juice and honey and bring to the boil. Reduce until sticky and pour over the chicken and return to the oven for another 20 minutes, basting occasionally.
