Get a pan hot and add olive oil. Brown the chicken pieces on both sides, seasoning as you go, then set aside.
To the same pan, add a little more olive oil and throw in your onion. Cook until translucent and starting to brown, then add your garlic. Fry briefly then add your vodka and tomato puree. Reduce and cook out briefly then add your tomatoes. Season with salt, sugar and chilli flakes. Bring up to a boil then transfer to a blender and blend until smooth.
Return to a clean pan over low heat and add butter a cream. Stir to combine, then return chicken to pan and add penne and 1/2 cup parmesan. Stir to combine.
Transfer to a large serving dish and top with another half cup of parmesan, a little olive oil and some basil.
