Taco Spiral Meatloaf

  1. Heat the oil in a saute pan over medium heat.  Add the onions, peppers and seasoning until softened and caramelized. Let cool. 
  2. In a large bowl, mix together the beef mince, egg, breadcrumbs, garlic, tomato paste, salt, pepper and fajita seasoning until combined. 
  3. Preheat oven to 180ºC. 
  4. Place a large piece of cling film on a big board.  Spread the meatloaf mixture out on the cling film in a rectangle in an even layer about ½” thick. 
  5. Sprinkle with grated cheddar and then spread the peppers mixture over top followed by more cheese and chopped jalapeno.  
  6. At the short end, tightly roll the mixture into a log and seal the ends.
  7. Transfer to a lined baking tray. Brush with oil and bae for 30-40 minutes or until cooked through. 
  8. Meanwhile, add all the salsa ingredients to a food processor.  Pulse until finely chopped. 
  9. Using a slotted spoon, add some salsa to the top of the looked meatloaf.  Top with cheese and grill for 5 minutes until melted. 
  10. Layer the nachos chips with cheese, jalapenos and salsa and bake until melted, about 5 minutes.
  11. Sprinkle with chopped coriander, enjoy!
