Mama Shrimp Noodle Pakoras

Directions

  1. Heat a heavy saucepan with roughly 1ltr sunflower oil to 170°C for deep frying.
  2. In a large bowl whisk together the flour, half the seasoning packet from the Mama Noodles, the chilli powder sachet and baking powder. 
  3. Add the red onion, carrot, mushrooms, green chilli and vigorously mix so all the vegetables are coated in the seasoned flour. Add the lemon juice and water, mixing until you have quite a thin batter - it should just coat the back of a spoon. Stir through the mama noodles. Take 1 tsp of the hot frying oil and stir this through the mix. 
  4. Take a dessert spoon and scoop up some of the pakora mixture. Place a prawn on top and add a little more pakora mixture on top of that.
  5. Fry until golden and cooked through. Serve piled high with the coconut sauce and coriander chutney. 
  6. To make the coconut sauce, reduce all the ingredients in a saucepan until thick and delicious. Allow to cool.
