Sometimes, we all want that sweet hit that only a burger can provide — but this can prove troublesome for people who are plant-based, or trying to consume less meat to make a positive impact on the environment. Luckily, our veteran chef, Hugh, whipped up some tasty satay burgers to satisfy that craving, using the Breaded Nuggets from Tesco's Plant Chef rangeIn the video, Hugh makes a satay-inspired sauce, which he explains is much simpler to make than the traditional South-Asian version. It only takes 30 seconds, so that the whole burger comes together in a pinch — but with no compromise on sustainability, affordability, or taste.

  1. Preheat the oven to 180°C and place the Tesco Plant Chef Breaded Nuggets on a baking tray. Cook to packet instructions.
  2. Add half the lime juice to a small bowl along with a tsp of sugar. Whisk, then add the chillies and set aside.
  3. In a small saucepan whisk the peanut butter, coconut milk, 1 tsp of the remaining lime juice, sugar, soy sauce and curry powder together, heating gently until combined.
  4. Meanwhile, whisk together the remaining coconut milk and remaining lime juice together to drizzle over at the end.
  5. Toss the Tesco Plant Chef Breaded Nuggets in the satay sauce, reserving some to drizzle over later.
  6. Toast the plant-based burger buns in a hot pan.
  7. Spread the Tesco Plant Chef Coleslaw on the bottom bun, then the satay nuggets, more satay sauce, pickled chillies and lots of coriander - stalks and all. Squeeze over the lime wedges.
  8. Place the top buns on top and serve!
