Sheet-pan Thanksgiving Grilled Cheese

  1. Preheat oven to 190ºC. 
  2. Season the Turkey breasts with all of the ingredients.  Rub to coat well. Bake for 30-40 minutes, basting with the juices ever 15 minutes. Cook until golden brown and cooked through. 
  3. Slice the turkey breasts on a bias quite thin. Then place back in the pan with the juices and set aside.
  4. In a large saute pan over medium heat, cook the bacon until just crispy.  Add a little bit of oil if needed then the onions and cook until softened.  
  5. Then add the apples and garlic and cook until aromatic. Crumble in the sausage meat and break apart with the back of a spoon.  Cook through until caramelized. 
  6. Add the sage, nutmeg and season with salt and pepper.  Set aside
  7. Meanwhile, make the cranberry sauce. Add all of the ingredients to a pan and let cook down until thickened, set aside and let cool.
  8. To layer, the sandwich, brush the bread with butter and place butter side down on a large sheet tray. Spread a thin layer of cranberry sauce, top with grated cheddar, sliced turkey, stuffing, brie, cranberry sauce and cheddar and finally more butter bread, buttered side up.
  9. Bake for 10-15 minutes until golden on the bottom.  Grill the top for 2-3 minutes until browned. 
  10. Serve with turkey gravy
