A baking Instagram star has come up with another knockout dish, wowing her followers with a stellar cheesecake recipe.

Eloise Head, who became a household name after her FitWaffle Kitchen blog found a huge audience over lockdown, makes the delicious dessert with a variety of basic baking ingredients.

The simplicity of the recipe has got tongues wagging and tummies rumbling across the Internet.

‘No-bake’ chocolate cookie dough cheesecake recipe

The recipe for Head’s “no-bake” chocolate cookie dough cheesecake is actually incredibly simple, as outlined by a detailed video on the FitWaffle Kitchen Instagram account.

In order to make the dish, you will need the following ingredients:

For the cookie dough

  • 110g unsalted Butter
  • 100g light brown sugar
  • 50g granulated Sugar
  • 30ml milk
  • 1 tsp vanilla extract
  • 160g plain flour, heat treated
  • 1/2 tsp salt
  • 100g chocolate chips
  • Set aside 1/3 of the cookie dough to roll into tiny balls for the topping

For the cheesecake

  • 480ml double cream, cold (save 1/4 for the topping)
  • 500g cream cheese
  • 120g icing sugar
  • 1 tsp vanilla extract
  • 100g chocolate chips

For the ganache

  • 150g dark chocolate (or choc chips)
  • 150ml double cream, HOT (microwave on high for 1min30)

The method for making the delicious dessert is as follows:

  • Cream together butter, light brown sugar and granulated sugar
  • Add milk, vanilla extract, treated flour, salt and chocolate chips to the mixing bowl before combining to make a dough
  • Set one-third aside for later
  • Spread remaining cookie dough out over the base of a springform pan
  • Leave to set in the fridge
  • For the filling, whisk together double cream, cream cheese, icing sugar and vanilla extract with extra chocolate chips
  • Spread mix over the set cookie dough base
  • Return to fridge for two hours

All this is then topped with a combination of chocolate ganache, decorative cookie dough balls made using the remaining dough mix and more whipped cream.

As Head puts it in the Instagram caption, “If you love cookie dough, you need to make this ASAP!” One look at the end result and it’s easy to see why she is so enthusiastic.

“Yes please” – fans react to the recipe

It’s clear that the concept of a no-bake cookie dough cheesecake is seriously popular. Head’s original recipe has accrued over 42,000 likes and thousands of enthusiastic comments on Instagram alone.

The reaction is actually so positive that Head has even been propositioned by several eager fans. As one supporter commented: “Mmmmm come to Canada and be my personal trainer and baker.”

It’s clear that Head herself is just as happy with the dish as her viewers. In her caption for the video, she wrote, “I have been dreaming of this cheesecake and I’m so excited to finally bring it to life!”

While it’s hard to go too wrong putting cookies in anything, Head’s version is clearly a cut above the rest.
