Woman shares recipe for brilliantly simple 4-ingredient Biscoff cheesecake

Even though most of us have got time to be a little more daring with our kitchen creations, you can’t overstate the value of simplicity. It’s no coincidence that most of the world’s tried and tested recipes rarely revolve around cooking something sous vide or turning your sauce into a foam. More often than not, it’s better not to overcomplicate something that’s already pretty tasty. 

Providing the proof of this pared-back pudding, an amateur Facebook baker recently went viral for her super simple, four-ingredient Biscoff cheesecake recipe. Easy to make and ready after just a few hours in the fridge, the dish shows exactly what’s still possible, even if access to a lab-load of gadgets is out of the question.

The recipe, which was originally posted to the popular Extreme Couponing and Bargaining Facebook group, involves a delicious blend of butter, Lotus Biscoff Biscuits, Biscoff spread and soft cheese. According to the creator:

“(Take a) Packet of biscoff biscuits and crush them, add 2 spoons of melted butter, mix it together and press into dish. Leave in the fridge for a couple of hours and then mix a full 200g tub of soft cheese with 200g biscoff spread, add it on top of your biscuit base. Leave in the fridge for 3-4 hours to set. I added more crushed biscoff biscuits round the edge and put two biscuits on top but that is optional.”

The recipe quickly proved incredibly popular, racking up over 200 likes and comments. Before long, other group members were sharing snaps of their own no-bake cheesecake efforts – some sticking to the Biscoff formula and others going a little more off-piste. 

As we all look for more elaborate ways to keep ourselves entertained, it’s easy to ruin dinner by trying to do too much.
