3 Ingredient Mango Coconut Marshmallows

Easy as 1, 2, 3.

Ingredients

  • 500 mlMango Juice or Puree
  • 5 tbspGelatin Powder
  • 100 gDessicated Coconut

With 3 ingredients and a little bit of time you can make these marshmallow-esq treats that live halfway between a gummy and a mallow.

Method

  • Add the juice/puree to a small saucepan and sprinkle over the top the gelatin powder.
  • Leave for a couple of minutes and allow to bloom.
  • Pop the saucepan on a low heat, and stir until the gelatin is dissolved.
  • Allow to cool to room temperature.
  • Place in a bowl and using an electric whisk, whisk for 5-7 minutes until light and fluffy.
  • Line a baking dish or glass dish with baking paper, and spread the marshmallow mixture over.
  • Place in the fridge for at least 6 hours before cutting. Once set, cut into squares.
  • Coat squares in dessicated coconut.
