They are an innovative and inexpensive way to feature carrots in your diet, and they have a unique texture - slippery, noodlesque. We thought, why the hell not pair them with roast dinner flavours?
Boil the carrots in a saucepan of deep water until very tender, then mash them or blend if you want them really smooth.
Add the flour and knead until you have a pliable dough, then divide into roughly 25g balls and flatten with your palm and squish with your thumb to make the imprint.
Heat a pan of water to a rolling boil and cook the carrot noodles - they will bob to the surface when they are done.
Serve with roast bits - gravy, some braised meat, broccoli, peas, some crispy potato bits - whatever takes your fancy.
