Chicken Chicharrón Nachos

Okay, this is something we saw online and just HAD to try. It's chicharrón but not with pork, without the laborious double cook and faff. It's chicken!

Ingredients

  • 2 chicken breasts
  • 1 tspsmoked paprika
  • 2 tspflaked sea salt
  • 1 tspgarlic powder
  • 3 tspbaking powder
  • 1 tbsp vegetable oil
  • to taste nachos bits - guacamole, salsa, cheddar, jalapenos, sour cream

And it's not even chicken skin, it's just chicken breasts blended to a really smooth paste with a number of spices. That's it. So simple and so delicious! Also, completely carb free. You have to try these!

Method

  • Preheat the oven to 180°C. Blend the chicken breasts with the spices and baking powder until they have become a smooth paste.
  • Spread the chicken out on a lined baking sheet as this as you possibly can. It helps to use a bench scraper for this.
  • Place the chicken sheets in the oven and bake for roughly 40 minutes to an hour, brushing with oil and flipping them halfway. They will bubble up and go really crispy.
  • Serve them with nacho accompaniments - guacamole, sour cream, salsa, shredded cheese and jalapenos
