After all, there are fewer things more delicious in life than a cheesy garlic bread. And this takes the idea up a notch.
In a small saucepan, place the (peeled) garlic cloves and the olive oil. Heat over a very gentle flame until the oil is simmering, then cook the garlic for around 20 minutes until the cloves are golden brown and squishy. Remove from the oil - you can use this as a base for a delicious garlicky salad dressing.
When they've cooled down, mix with the garlic cloves with the butter and parsley and set aside.
Divide the pizza dough in two and shape into rough circles that fit into a skillet. Brush one of the dough circles with lots of the butter and sprinkle with the cheese, then top with the other dough and seal the edges. Use a pizza cutter to cut a grid pattern into the dough and carefully slide it into the skillet.
Bake for 20 minutes or so, then cover with a tea towel to soften and brush with more garlic butter. Sprinkle with chives if you wish.
