Chocolate Raspberry Dutch Baby

Check out this dutch baby! If you’re wondering what the hell that is, it’s essentially a Yorkshire pudding full of delicious sweet things. If you don’t know what a yorkshire pudding is, it’s a kind of crazy oven pancake.

Ingredients

  • 4large eggs
  • 2 tbspsugar
  • a pinchsalt
  • 50gplain flour
  • 15gcocoa powder
  • 120mlwhole milk
  • 100graspberries
  • more raspberriesto serve
  • vanilla ice creamto serve
  • chocolate sauce to serve

My version is chocolate, studded with raspberries and served with ice cream and chocolate sauce. It’s a future classic with all my favourite ingredients, please give it a try.  

Method

  • Heat oven to 200°C.
  • Whisk eggs, sugar and salt.
  • Add flour and cocoa, whisking until mostly smooth (some tiny lumps are okay, but whisk out what you can). Drizzle in milk, whisking the whole time.
  • Heat an oven proof saucepan and add the butter until sizzling. Pour in the batter, running it around the evenly coat the bottom and the sides.
  • Bake for around 20 minutes, until puffed up. Remove from oven and top with fresh raspberries, ice cream, chocolate and chocolate shavings, to taste. Eat hot!
