Egg Fried Rice with Crispy Leeks

Egg fried rice. Crispy leeks. Two beautiful things, one dish, some really delicious eggs.

Heat 1 tbsp oil in a large frying pan over medium-high heat. Fry the leeks for 5-6 mins until soft and lightly golden, transfer to a paper towel-lined plate, and set aside. Keep any remaining oil in the pan.

Whisk two British lion eggs well with a pinch of salt.

Heat the oil back to medium-high heat. Add the whisked eggs and scramble. Once the eggs are ¾ of the way cooked, crumble in the rice.

Break the rice in with the egg with a wooden spoon. Stir through the sweet chili sauce and soy sauce, salt, and pepper. Add 3/4/ of the leeks back and stir well

Meanwhile, heat some oil in a pan over medium heat, crack two eggs, and fry them until the whites are set.

Serve the rice with a fried egg on top and garnish with crispy leeks.
