If there are two things us brits love it's a decent Chocolate bar and an Eton Mess, so why not have both together! Layers of fresh strawberries, meringue pieces, and whipped cream all encased in a white creamy chocolate shell.
Melt white chocolate and cover the inside of the mold with a thin coating. Place sliced strawberries before pouring if you so wish, then chill till set.
In a bowl bloom the gelatin with a few tablespoons of water. Leave to one side.
In a new bowl, add cream, icing sugar and vanilla extract then whip to very soft peaks.
Heat the bloomed gelatin for a few seconds until melted. Add in a spoonful of the cream mixture and stir. Pour the cream gelatin mix into the main cream bowl and whisk right away and finish whipping the cream.
In the white chocolate mold, layer jam, diced strawberries, and meringue pieces. Cover with a layer of cream then repeat if you have room.
Finally pour the remaining melted white chocolate over the top to seal in the bar. Chill until set then enjoy!
