Gnocchi Pizza

It's gnocchi, but it's also a pizza?

Ingredients

  • 750 gdried gnocchi, cooked
  • 300 mlpizza sauce
  • 200 gpizza mozzarella
  • 150 gpepperoni
  • 1 small jarpesto
  • 30 gparmesan

See this as the ultimate smashed gnocchi - it's crispy, chewy and sort of but also entirely unlike a pizza.

Method

  • Preheat the oven to 200°C. Take the cooked, steaming gnocchi and pour them onto a lined baking tray. Place some aside for the rim. Place another piece of baking paper on top and use a rolling pin to roll the gnocchi together into one sheet. Get a 23cm cake tin and cut around (or just shape it with your hands).
  • Stick some gnocchi around the edges to make the pizza rim, then drizzle with olive oil and roast until crispy before building the pizza as normal - we've suggested pizza sauce and pepperoni but really this is your pizza so make it however you wish.
  • Return to the oven until cheese is melted and the pizza is cooked to your liking. Cover with parm and eat.
