Homemade Penguin Bars

Lets make some real penguin bars, ones with an ACTUAL CHOCOLATE COATING!

Ingredients

    Chocolate Shortbread
  • 200 gSalted Butter
  • 110 gIcing Sugar
  • 1 tspVanilla Extract
  • 290 gPlain Flour
  • 40 gCocoa Powder
  • Malted Chocolate Filling
  • 100 gUnsalted Butter
  • 100 gIcing Sugar
  • 1 tbspCocoa Powder
  • 1 tbspMalted Milk Powder
  • Chocolate Coating
  • 150 gDark Chocolate
  • 150 gMilk Chocolate
  • 20 gCoconut Oil

Since Cadburys decided to wreck the nations favorite chocolate biscuit bar, we've decided enough is enough. We don't want 'chocolate flavored coating', we want the real stuff. Chocolate crumbly shortbread sandwiched with a malted chocolate filling, then dipped in coating of REAL chocolate.

Method

  • Cream butter and sugar, then mix in dry ingredients (flour and cocoa) until a soft dough forms. Chill if necessary
  • Shape dough into a log, wrap, and chill for 1-2 hours.
  • Slice dough into biscuits, place on baking trays, and bake at 130C/265F (fan on) for 20 minutes.
  • While the biscuits are cooling mix butter, icing sugar, cocoa powder and malted milk powder in a bowl. The use to sandwich two biscuits together then chill until ready to dip.
  • In a large jug melt the two types of chocolate along with coconut oil. Dip each sandwich biscuit and place on a lined tray.
  • Optional - Sprinkle with sea salt flakes.
  • Place tray of coated 'penguins' in the fridge until set.
