Ingredients

  • 3 hot cross buns
  • 200 gmascarpone
  • 150 mldouble cream
  • 50 gicing sugar
  • 1 tspcinnamon
  • from half an orange orange zest
  • to taste pistachios, candied oranges, more nuts etc

Hot cross buns are really having a moment. People are crazy for these sticky, fruit stuffed beauties - often toasted with butter. But we're taking things a step further and stuffing them with a sweetened cream cheese mixture and rolling them in all of our favourite things. We suggest you do, too.

Method

  • Slice the hot cross buns almost in half so you can pipe the filling into the middle.
  • Whisk the mascarpone, double cream, icing sugar, zest and cinnamon together until it thickens. Don't over whisk as this can cause it to split. Pipe this mixture into the hot cross buns - use a small spatula to get that characteristic pac man smooth finish.
  • If you want to roll the maritozzo in nuts now is the time to do so before eating!
