Hot Sauce Potato Salad

Because if we want to see a potato, we want to smash it.

Ingredients

  • 1 kgsmall maris piper potatoes
  • 1 tbspflaked sea salt
  • 3 tbspolive oil
  • 150 mlmayonnaise
  • 3 tbspFranks Hot Sauce
  • 4 breastsSupermarket fried chicken
  • to taste crumbled blue cheese

And why wouldn't we when they taste this good? This is an all American inspired masterpiece of hot sauce, mayo and diced fried chicken.

Method

  • Preheat the oven to 180°C. Heat a large pan of water to a rolling boil and add the potatoes and salt. Cook until they are almost cooked through then remove and place on a lined baking tray.
  • Use a flat bottomed sturdy glass to smash them (or similar) then drizzle with more olive oil and bake until crispy - usually around an hour. Flip them halfway.
  • Meanwhile, whisk together the mayonnaise and hot sauce and cook the chicken to oven instructions then chop it up. Toss the potatoes with the spicy mayonnaise chicken, pile up and drizzle with ranch and sprinkle with spring onions and blue cheese.
