Mango Passionfruit Loaf Cake

Ingredients

    Cake Batter
  • 300gplain flour
  • 200gcaster sugar
  • 2 tspbaking powder
  • 1 tspbaking soda.
  • 1/4 tspsalt
  • 100gplant butter
  • 250gfresh mango puree
  • 125gplant based yoghurt
  • 60mloat milk
  • 1vanilla pod, seeds removed
  • Glaze
  • 1 passionfruit, pulp
  • 125gicing sugar
  • Garnish
  • chopped mango
  • edible flowers

This mango passionfruit loaf cake is the perfect summery treat. It's simple to put together and has the freshness of mango, so best to use them when they're in season to get a lovely mango sweetness. The cake itself is so tender and delicate topped with a tangy passionfruit glaze for the perfect contrast. IF you're not a fan of passionfruit, you can omit it and add some lemon or even a raspberry glaze would be lovely! Make this for your next al fresco event and it will be a hit!

Method

  • Preheat oven to 170 celsius. Grease and line a loaf pan and set aside.
  • In a bowl whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a stand mixer, add the softened butter and mix on low speed for about 1 minute. Add in mango purée, room temperature yogurt, milk, and vanilla, and mix until smooth.
  • Add in dry ingredients, scraping the bottom and sides of the bowl with a silicone spatula as needed. Mix on low until smooth. Transfer batter into a greased loaf pan. Bake for 55 minutes to 1 hour or until a butter knife through the center and comes out clean. Let the cake cool completely in the pan before removing it.
  • Combine glaze ingredients and whisk until smooth. Pour it over the cake and garnish as desired with mango and flowers. Enjoy!
