Phitzee's Kebab-Style Ajvar Casarecce

Ingredients

  • 200gNorthern Pasta Co casarecce
  • 1 blocksmoked tofu
  • 1/2 white onion
  • pinchsalt
  • 2garlic cloves
  • freshly ground black pepper
  • 1 tsppaprika
  • 1 tspmixed herbs
  • 1/2 tspcumin
  • 1/2 tbsptomato paste
  • 2-3 tbspPhitzee’s mild Ajvar
  • 1 cupsoya yoghurt (unsweetened)
  • 1/2lemon, squeezed
  • parsley
  • salt, to taste

Method

  • Using a vegetable peeler or box grater, slice the tofu into thin shreds and set aside.
  • In a wide pan, soften the onion with a generous pinch of salt until translucent (about 5 mins), then add half the garlic and tofu. Cook briefly then add the black pepper, paprika, mixed herbs, cumin, and tomato paste. 
  • Cook the pasta according to the package instructions, then drain, reserving some pasta water. Add the ajvar to the pan along with a splash of pasta water and toss with the pasta. 
  • Combine the yoghurt, lemon and remaining minced garlic in a bowl. Season to taste.
  • Divide the pasta between bowls and serve with a dollop of garlic yoghurt and garnish with finely chopped parsley.
