Pickle Butter Reuben Sandwich
You could serve this pickle butter with just about anything.

Ingredients
- 150gsoftened salted butter
- 4 or 5diced pickles
- 3 tbspdiced dill
- 1 baguette
- around 200gsliced pastrami
- around 200gswiss cheese
- 1 tubsaurkraut
- 100ml thousand island dressing
But we think serving it in a Reuben sandwich just makes SENSE, right? Something about this NYC Jewish deli classic is just calling out for an outrageous slathering of pickle butter.
Method
Mix the butter with the pickles and the diced dill. Season to taste.
Spread this liberally up the baguette and top with the sliced pastrami, sliced cheese, saurkraut and dressing.
Cut into sections and eat!
