Picky Bits Loaded Oil

Everyone's favourite style of eating has been turned into a... what exactly? Is it a dip, or a sort of charcuterie salad?

Ingredients

  • 150 mlextra virgin olive oil
  • 3 tbspbalsamic vinegar
  • 200 gsalami
  • 150 gbreasola
  • a handful cornichons
  • a handful olives
  • a handful sundried tomatoes
  • a handful burrata
  • 30 gparmesan
  • a small handful finely chopped parsley
  • to taste sea salt and freshly ground black pepper

That's up to you to decide. Whatever your conclusion, you are bound to enjoy this. It almost feels healthy, too.

Method

  • Choose a plate with a high rim and pour over the olive oil and balsamic vinegar.
  • Assemble the rest of the ingredients in whatever way pleases you. These are not compulsory - you can add whichever things you choose.
  • Toss it all together a bit and eat with a crusty bread like ciabatta.
