Just when you didn't think shortbread could get even better we present to you these pineapple brown sugar shortbreads, sweet and syrupy pineapple rings baked on top of that classic buttery biscuit base - and all you need is 5 simple ingredients!
Preheat oven to 175ÂșC and line a tray with baking paper.
In a bowl cream together softened butter and caster sugar, then add flour and mix until a breadcrumb texture is achieved. Bring the mix together using your hands to create a dough.
Roll out dough to around 1 cm thick then cut out circles that are around the same size as pineapple rings. Place these on baking paper, then leave in the fridge to chill.
Place pineapple rings on kitchen roll to remove the excess juice, then coat with a thin layer of brown sugar. (Take care not to over use the sugar as this will turn to syrup in the oven and cause the shortbread to drown and not bake properly)
Place a sugared pineapple ring on top of each chilled shortbread and bake for around 20 mins or until the the biscuits start to brown and the edges of the pineapple are caramelized.
For more caramelization you can add more sugar after and carefully place back under the grill under constant supervision!
