Pistachio Cornflake Hedgehogs
The old school favorite just got an upgrade.

Ingredients
- 210gWhite Chocolate
- 2 or 3 TbspPistachio Paste
- 55g Cornflakes
- Crushed Pistachios
Cornflake hedgehogs like you've never seen them before! Crispy cornflakes combined with creamy white chocolate and smooth pistachio paste topped with crushed pistachios for extra texture. An absolute crowd pleaser!
Method
In a bowl melt the white chocolate. Save around 2 Tbsps to the side for drizzle later on.
Add to the bowl the Cornflakes and Pistachio Paste.
Mix thoroughly until the Chocolate and Pistachio are combined and all the flakes are covered.
Using two spoon heap small mounds of the mixture onto a baking paper covered tray, then place in the fridge to chill.
Once set, drizzle with the remainder of your melted chocolate and sprinkle over the Crushed Pistachios.
