Prawn Toast Wonton Nachos

Ingredients

  • 700 gfresh prawns
  • 3 spring onions
  • 2 egg whites
  • 3 tspcorn flour
  • 1 tbspsesame oil
  • 2 cloves garlic
  • 1 thumb, finely chopped ginger
  • 1 tbsp flaked sea salt
  • 20 or so fresh wonton wrappers
  • 2 litres frying oil
  • to taste sauces
  • to taste mixed sesame seeds
  • to taste more sliced spring onion greens

Crab rangoons sound great and all that, but they aren't really a thing here in the UK. What is a thing? Prawn toast! This recipe naturally is what follows.

Method

  • Place all the ingredients except the wonton wrappers and sauces in a blender and blitz for around 10 seconds until you have a smooth(ish) paste.
  • Take the wonton wrappers and place spoonful of the mix between two, sealing the edges with a damp pastry brush.
  • Fry the wonton/prawn parcels until they puff up and are nice and crispy.
