If you're looking to impress but only have time for something low effort, then this recipe is one to save. Just one sheet of filo gives this simple tiramisu a fine dining entrance. First to make the puffed Filo 'pillow' then it gets filled with mascarpone cream and coffee soaked biscuits.
Preheat oven to 180ÂșC and place baking paper on a tray
Take one sheet of Filo pastry and fold into 4. Cut along the lines to make 4 equal pieces. One one sheet wet a 1 to 2 cm border around the edge using water and place another sheet on top. Brush with butter on both sides, cover with sugar and place in the oven on the baking sheet till golden brown and puffed - Usually around 15 to 20 mins.
In a bowl add mascarpone, double cream, sugar and vanilla extract then mix with an electric mixer until soft peaks.
Once out the oven and cooled, carefully turn over your puffed filo and break a hole big enough to fill in the back. Pipe or spoon in a layer of your cream.
Dip ladyfingers into a mixture of espresso, coffee liqueur and cocoa powder then break in half the place on top of your cream inside the filo pillow. Pipe more cream over the top to finish - care not to overpipe and crack the filo shell.
Carefully turn the filo over, drizzle with a little cream and finish with a layer of sprinkled cocoa powder.
