Reeces Pies Cream Sandwiches
Ice cream sandwiches just got a major upgrade15 minutes prep

Serves 6-8
Ingredients
- 2 Shortcrust Pastry Sheet
- 8 Peanut Butter Cups
- 1 Egg
- 100 gDark Chocolate
- Ice Cream
Why sandwich your ice cream between something boring when you can stick it between two dessert pies instead?
Method
Preheat oven to 180ºC fan
Cut out 16 circles from the pastry. On 8 of them place a peanut buttercup, slightly wet the edge of the exposed pastry and place another circle on top. Seal the edges together using a fork, egg wash over the top, then bake for 10 min or until golden.
Once the mini pies are cool, dip the bases in melted chocolate and place on baking paper. Then set in the fridge.
Place a scoop of ice cream in the middle of two pies and enjoy!
