Spicy Lentil, Spinach & Crispy Onion Lasagne

    What you'll need:
  • X2 Bens Original Plant Powered Spicy Lentil Stew
  • 1 x packet dried lasagna sheets
  • 80gbaby spinach
  • 350g6 brown onions
  • 1 bulbgarlic
  • 50gplain flour
  • 100gvegan butter block
  • 1 litreoat milk
  • 120ggrated vegan cheese
  • 30gextra virgin olive oil
  • 10gred chilli
  • a sprigrosemary

When we think of comfort food, lasagne is one of the first things that springs to mind for most people - layer upon layer of rich ragu and cheesy bliss. Comfort food should be easy to make as well as delicious, leaving you time to enjoy the other finer things in life. Method

  • Preheat the oven to 175°C.
  • Begin with the crispy onions. Finely slice the onions and cook them down in olive oil for 30-40 minutes. Keep the heat medium-low, and once complete, transfer to a bowl and set aside.
  • For the ragu, chop the garlic, chilli & rosemary to gently fry in olive oil. Add the Ben’s Plant Powered Spicy Lentil Stew and a handful of baby spinach, and once wilted, it's ready!
  • To layer the lasagne, get a pyrex dish and follow the order: ragu, plant-based béchamel, crispy onions, lasagne sheet. Repeat and top with cheese.
  • Bake for 45-55 minutes until golden. Rest for 30 minutes, cut into portions and enjoy!
  • Once it’s golden and cooked, let it rest out of the oven for 30 minutes, then cut into portions. Enjoy!
