Spiderweb Chocolate Cheesecake Cookies

  • 300 gPlain flour
  • 50 gCocoa powder
  • 1 tspSalt
  • 3/4 tspBaking powder
  • 225 gUnsalted butter
  • 200 gBrown sugar
  • 100 gGranulated sugar
  • 1 Large egg
  • 1 tspVanilla extract
  • Granulated sugar for rolling
  • Others
  • 125 gMascarpone
  • 125 gCream cheese
  • 100 gIcing sugar
  • 1 tspVanilla extract
  • 2 Marshmallow (large)
  • 100 gDark Chocolate
  • 100 gDouble Cream

Cheesecake, chocolate cookies and marshmallow... what a combo! These handheld cheesecake cookies are not only delicious but also perfect for Halloween (or any time of the year to be honest!)

Method

  • Preheat the oven to 350°f / 180°c. Line three baking trays with parchment paper. In a medium bowl, sift together the flour, cocoa powder, salt, and baking soda.
  • In a bowl, pour heated cream over dark chocolate and set to one side to melt. Cover the bowl with cling film.
  • Cream butter and sugars, add egg and vanilla, then flour and cocoa mixture.
  • Roll 40 g of dough into balls, then coat in granulated sugar. Place on the baking tray with a room to spread, usually around six on a tray.
  • Bake for 10 to 12 minutes then remove from oven and leave to cool for 15 minutes.
  • Heat a large marshmallow in a bowl for 8 to 10 seconds, then pinch a little between six fingers then spread over the cookie.
  • In a bowl mix mascarpone, cream cheese, icing sugar and vanilla extract.
  • Pipe a ring of cream cheese on top of the cookie, fill the centre with dark chocolate ganache and then place a spiderweb cookie on top.
