Sticky Mango Chutney Pigs in Blankets

Ingredients

    Sticky pigs in blankets:
  • 20pigs in blankets
  • 1 tspgaram masala
  • drizzle olive oil
  • 2 tbspmango chutney
  • handfulbombay mix
  • handfulfresh coriander, leaves picked
  • Raita:
  • 250gGreek yoghurt
  • 1clove garlic, crushed
  • 1/2 tspgaram masala
  • hanfulfresh coriander, finely chopped
  • 1 tspdried mint
  • salt & pepper, to taste

Pigs in blankets glazed in sweet slightly spicy mango chutney, topped with Bombay mix and served with a cooling mint and coriander raita.

Method

  • Combine raita ingredients in a bowl, then place in the fridge to chill.
  • Place pigs in blankets on a lined baking tray, evenly spaced, then sprinkle over a little garam masala and drizzle with olive oil.
  • Start baking your pigs in blankets at 200°C (fan 180°C). After 10–12 minutes (halfway through cooking), remove from the oven and brush with mango chutney . This lets the chutney heat up, stick, and start caramelising.
  • Return to the oven for another 5–8 minutes until the bacon is crisp, the sausages cooked through, and the glaze is shiny and sticky.
  • Optional extra: Right at the end, give them a final light brush of glaze for maximum shine and stickiness before sprinkling the Bombay mix and fresh coriander.
