Pigs in blankets glazed in sweet slightly spicy mango chutney, topped with Bombay mix and served with a cooling mint and coriander raita.
Combine raita ingredients in a bowl, then place in the fridge to chill.
Place pigs in blankets on a lined baking tray, evenly spaced, then sprinkle over a little garam masala and drizzle with olive oil.
Start baking your pigs in blankets at 200°C (fan 180°C). After 10–12 minutes (halfway through cooking), remove from the oven and brush with mango chutney . This lets the chutney heat up, stick, and start caramelising.
Return to the oven for another 5–8 minutes until the bacon is crisp, the sausages cooked through, and the glaze is shiny and sticky.
Optional extra: Right at the end, give them a final light brush of glaze for maximum shine and stickiness before sprinkling the Bombay mix and fresh coriander.
