We've got sushi tacos. They are perfect for those days when you can't decide so fusion is the only option.
To make the tacos, cut nori into taco sized circles. You can use a small side plate to cut around.
Whisk the batter ingredients together, just - if you over whisk you'll develop the gluten and the batter will become thick and leather like rather than light and crispy.
Heat a pan of oil to 180°C. Carefully place a circle of nori on top of the batter so it coats one size then lift it up with chopsticks and place it into the oil. It'll crackle and pop - push the circle down in the middle to make a dipped taco shape. Remove from the oil, dry with towels and fill with your sushi flavour of choice - we went for spicy tuna mayo!
