Ingredients

    for the vinaigrette
  • 250mlextra virgin olive oil
  • 65mlred wine vinegar
  • 1 heaped tspwholegrain or dijon mustard
  • 1.5 tsphoney
  • Salt and pepper, to taste

Vinaigrette is a basic french dressing of primarily vinegar and oil. We've also added wholegrain mustard and honey here, but use this recipe as a foundation and add whatever you like! For example, if you'd like an Asian-inspired dressing, swap out these ingredients for soy sauce, sesame oil, or rice vinegar. Once you know how to make vinaigrette you have a canvas for all sorts of flavours. Go wild!

Method

  • Whisk all of the ingredients together thoroughly, either using a fork or a small whisk. You can also do this with an immersion blender to emulsify the vinaigrette if you want a thick dressing.
  • Taste, and adjust for seasoning as necessary. If you have one spare, dunk a lettuce leaf into the vinaigrette to taste.
  • Serve however you like, and enjoy!
