Rocky Road Christmas Pudding

On the 10th day of Twistmas I’m giving you a stunning alternative to a Christmas pudding.

Ingredients

  • 200gbutter
  • 5 tbspgolden syrup
  • 400g dark chocolate
  • 400gmilk chocolate
  • 150gmixed marshmallows
  • 150gtoasted nuts
  • 100graisins
  • 100gdried cranberries
  • 100gwhite chocolate

Let’s face it, Christmas pudding is weird - what other cake lasts for essentially 10,000 years, contains potentially lethal coins and is flammable? None, that’s what. So sorry, Xmas pud, we love you but you’re getting a festive glow up. All hail the rocky road Christmas pudding, which is just SO much easier and more delicious. 

Method

  • Heat the butter, chocolate and golden syrup together in a bain marie.
  • Stir in all the other ingredients for the rocky road and pour into a lined pudding basin. Chill until solid, roughly 3 hours.
  • When solid, remove it from the pudding basil and remove the clingfilm. Heat the white chocolate until molten and pour it over the top, then finish with some glace cherries.
