Some people don't like the crusts on a pizza. If you are part of this sad demographic, I advise you to go elsewhere. This pizza takes the concept of the "stuffed crust" and applies that concept to the whole pizza. That's right, it is, in a sense, all crust.


Preheat the oven to 180°C. First up, whisk that yeasty yeast into the warm warm water with the sugar and olive oil. Great! Now, mix it into the flour along with the salt. Knead it for ages, adding a few sprinkles of flour if it's too sticky.

Place in a greasy bowl, cover with clingfilm and allow to rise somewhere warm.

When it's ready, make sure your work surface is clean before stretching the dough out into the longest sausage you can muster. Pat it flat (you are going to stuff it) then spread the n'duja along the whole length, along with half of the mozzarella. Pinch the sides together to seal in all that goodness, then roll the whole thing into a sloppy spiral.

Carefully pick up the spiral and place it in a greaseproof paper-lined skillet. Top with tomato sauce and lots of spicy sausage slices. Bake for around 20 to 30 minutes.

Take it out of the skillet, drizzle with honey and sprinkle with chilli flakes and parmesan.

Serve forth.
