These might actually be the easiest muffins you ever make, pass it on. All you need is a roll of puff pastry, some of your favourite toppings and a little bit of craftsmanship. We've gone for blackberry jam and bananas - basically the perfect excuse to eat these for breakfast?
Preheat oven to 180ÂșC and line a muffin tin with baking papers.
Lay out your puff pastry sheet.
Spread over a thin layer of jam, then cut into 6 equal strips lengthways.
Slice banana into small disks then place along the top edge of the pastry
Fold up the bottom edge, then roll from left to right.
Place into your muffin tin, then brush the top with a beaten egg and sprinkle with sugar.
Bake for 15 to 20 mins until golden brown.
