Black Bean Hot Dog Tacos

An easy mid week meal using simple ingredients plus black beans and LIKE Hot Dog for extra protein

Ingredients

    Black bean and LIKE hot dog filling:
  • 4 LIKE hot dogs
  • 1/2 red onion, finely chopped
  • 1 tbspolive oil
  • 1.5 tspground cumin
  • 1.5 tspsmoked paprika
  • 1/2 tspgarlic powder
  • 1/4 tspdried oregano
  • 1/2 tspchilli flakes
  • 1/4 lime, juice
  • 255 gblack beans
  • Lime crema:
  • 75 gsoy or oat yoghurt
  • to taste lime, juice
  • To assemble:
  • 4 soft corn taco shells
  • to garnish pink pickled onions
  • 1/2 fresh jalapeno, thinly sliced
  • 1/4 avocado
  • 1 tbspplant based feta
  • to taste hot sauce or Tajin

Our best mate when it comes to quick and easy meals is pretty much always tacos. Slices of Like Hot Dogs fried with onion, garlic, spices and black beans, served in corn tortillas with a lime crema and your favourite toppings…and there you have a mid-week meal that’s packed with protein and flavour…Like at First Bite.

Method

  • Fry Like Hot Dogs for 6 minutes then slice and set to one side.
  • Fry the diced onion for a few minutes until softened then add the spices and lime juice and fry for 30 seconds - 1 minute. Add the black beans in some of their juices and stir together to combine. 
  • Add the sliced LIKE hot dogs and simmer in the beans for around 5 minutes.
  • Whilst they cook, mix the yoghurt with a pinch of salt and lime juice to taste. Prep your toppings and set aside.
  • Fry the taco shells in a dry hot pan to gently char, then plate up with the beans and hot dogs and your toppings of choice.
