Chilli Non Carne Lasagna

Ingredients

When we think of comfort food, lasagne is one of the first things that springs to mind for most people - layer upon layer of rich ragu and cheesy bliss. Comfort food should be easy to make as well as delicious, leaving you time to enjoy the other finer things in life. Method

Preheat the oven to 180°C.

Heat the butter in a small saucepan until foaming. Add the plain flour and stir until you have a smooth paste - let it cook out for a few seconds until it smells biscuity. Incrementally pour in the milk, whisking vigorously between each addition, until you have a thick sauce. Add the seasoning and turn off the heat, then add the cheese in handfuls, stirring it all until completely incorporated. Check the seasoning.

Spread a little of the cheese sauce on the bottom of a deep baking dish, then top with a layer of the dried lasagne sheets. Spread a little more cheese sauce on top, followed by 1 pouch of Ben's Plant Powered Chilli Non Carne and a sprinkling of mozzarella. Repeat twice with more lasagne sheets, sauce, Chilli Non Carne & mozzarella, finishing with a fourth layer of lasagne sheets. Spread the remaining sauce on top and sprinkle with the tortilla chips, grated cheddar, then dot the pickled jalapenos over the top.

Cover with foil and bake for 30 minutes, then remove the foil and bake for a further 15 minutes or until the cheese has some golden spots and is bubbling.

Serve with fresh coriander leaves.
