Doritos Extra Flamin’ Hot Fish Tostadas

Super crunchy, sweet and spicy, these fish tostadas are made in the air-fryer, and made even bolder with the help of Doritos Extra Flamin' Hot!

Ingredients

Doritos Extra Flamin' Hot crusted tortillas

2small flour tortillas

1/2 packetDoritos Extra Flamin' Hot

2eggs

100gflour

100-200mlvegetable oil

Coconuts crusted fish

2white fish fillets, chopped into big chunks

100gdesiccated coconut

1 tsppaprika

250gbreadcrumbs

Mango salsa

15gcoriander, finely chopped

1/2mango, cubed

2tomatoes, diced

1avocado, diced

1-2red chillies, finely chopped

1lime, juiced

Spicy crema

1 tbspsriracha

3 tbspDoritos Sour Cream Dip

1/2 limejuiced

Pickled red onion

1red onion, thinly sliced

1 tspsalt

1lime, juiced

Sweet, tangy, spicy and crunchy, these fish tostadas are the perfect dinner idea when looking for a bit of boldness! Flakey coconut crusted fish, lathered with spicy crema and a sweet mango salsa, all served on top of a Doritos Extra Flamin' Hot crusted tortilla.

Method

First prepare your pickled red onions. Add all the ingredients into a bowl and set aside.

Next we’ll get the mango salsa prepped so that’s ready to go! You want to make sure all your ingredients are a similar size, I’ve gone for small cubes. If your chillis are quite spicy, just add the one. Once all your ingredients are in a medium sized bowl, mix together and season well with salt & pepper.

Of course we need a sauce! To make the spicy crema, add all the ingredients to a small bowl and mix together. If you’d like it to be spicier add extra sriracha!

 ⁠To make the star of the show, the Doritos Extra Flamin’ Hot crusted tostadas, you want to start by crushing a handful of Doritos. The trick here is to finely crush some, whilst leaving some semi crushed. This will ensure an even coating on the tortilla!

⁠Once you’ve done this, lightly whisk two eggs in a bowl and prepare another bowl with flour. Dip your tortillas first into the flour mixture, then the egg, and finally into your Doritos mixture. Once fully coated, they’re ready to fry!

For the coconut crusted fish, combine paprika, desiccated coconut, breadcrumbs & salt + pepper in a bowl. Using your leftover egg & flour, dip your white fish chunks first into the flour, then the egg, and finally the breadcrumb mixture. Once you’ve coated all the fish, spray with oil and bake or oven fry until golden and crispy.

⁠Heat up your oil in a pan - you don’t need this to be too deep as it just needs to sufficiently coat the tortilla. To check your oil is ready, dip your wooden spoon into the oil - if it bubbles around the spoon then it’s good to go! Fry your tortillas until crispy and transfer to a wire rack.

⁠Now we’re ready to assemble! On your Doritos crusted tortilla, go in with the spicy crema, the coconut crusted fish, mango salsa, and top with some pickled red onions. Add a squeeze of lime and you’re ready to enjoy !!
