Elotes Tart

Taking the viral puff pastry trend and making it elotes.

Ingredients

  • 1puff pastry sheet
  • 200gfeta, crumbled
  • 1 tinsweetcorn, drained
  • 2 tspMexican dried chilli of your choice
  • a good splashhot sauce
  • a squeeze of lime
  • a handfulchopped coriander

There are few things simpler and more delicious than Mexican street corn, slathered with crumbly cheese and chilli and sprinkled with a touch of lime. That is, until we made it into a tart! We can't emphasise enough how easy this is.

Method

  • Preheat the oven to 180°C.
  • Roll out the pastry sheet and score the sides.
  • Fill the middle with feta and sprinkle with the sweetcorn and chilli.
  • Bake for around 30 minutes or until completely puffed up and crisp.
  • Serve with the hot sauce and lime.
