Fondant Smileys

It's your favourite 90s potato dish, but they've got a fancy new makeover.

Ingredients

  • 6large potatoes
  • 2 tbspunsalted butter
  • 3 sprigsthyme
  • 3garlic cloves
  • 500mlgood quality stock

These are fondant potatoes, so they are fried in butter then poached gently in stock until they have this crazy delicious texture, like the inside of the best roast potato ever. Aren't potatoes great? You can never guess what they are going to do next.

Method

  • Peel the potatoes and cut them into circles. Use a metal straw to cut eyes and a spoon to cut a nice smiley mouth.
  • In a non stick frying pan, heat the butter and fry the potatoes gently on both sides until they are golden brown. Add the thyme and garlic and fry for a few minutes more on a low heat, then add the stock and a lid and continue cooking for roughly 20 minutes or until cooked through.
  • Serve with ketchup, obvs.
