Love Heart Mini Cheesecakes

Ingredients

  • 2 - 3 rollsLove Hearts
  • 150 gBiscuits
  • 70 gMelted Butter
  • 1 tubCream Cheese
  • 300 mlDouble Cream
  • 60 gIcing Sugar
  • 1 tspVanilla Extract
  • Food Colouring (Optional)

It's that time again to express how you feel to that one special person, so why not let dessert do the talking? An oaty biscuit base with added crushed up love hearts for an extra sweet kick, two helpings of vanilla cheesecake topped with more crushed sweets to finish.

Method

  • Grease a mini muffin tin (with removable bottoms) with butter.
  • Combine biscuit crumbs, crushed love hearts and melted butter. Then spoon one tablespoon into each compartment and press down lightly to create a base.
  • In a chilled bowl add cream cheese, icing sugar, double cream and vanilla extract. Whip up until thick and then use to top your biscuit bases. Place in the fridge, preferable overnight, to firm.
  • (Optional) Seperate your remaining cheesecake filling into 3 and mix in your chosen food colourings.
  • Spoon the softened filling onto the tops of your set cheesecakes and finish with more love hearts and sweet crumbs.
